On Friday 26 March 2004, Mr William White, of 15 Gainsborough Drive, Lowestoft, was prosecuted for food hygiene offences and ordered to pay fines totalling £4000 and £652.42 in expenses.
The case was heard at the Bury St Edmunds Magistrates’ Court. Mr White, who trades on the Saturday Haverhill provision market, pleaded guilty to five offences (fined £800 each) relating to a food and hygiene inspection made on 9 August 2003, including:
- Not identifying hazards within the business and taking steps to control them
- Displaying ready-to-eat shellfish at temperatures of 10-15 degrees Celsius, when the legal requirement is eight degrees Celsius or below
- Displaying ready-to-eat food which was not protected from contamination
- Having dirty equipment and no hot water to wash hands or equipment
- Not having any food hygiene training
