On Tuesday 22 June 2004, Mr Mohammed Soltani Pari, of High Street Haverhill was prosecuted for two food safety offences and ordered to pay fines totalling £2,100 and £812 in expenses.
The case was heard at the Bury St Edmunds Magistrates’ Court. Mr Pari is the registered proprietor of Papillon Pizza on 54 High Street, Haverhill. He pleaded guilty to two offences relating to food safety legislation, following a complaint received by Environmental Health Officers in January 2003 regarding an undercooked chicken burger:
- selling an undercooked chicken burger which was unfit for
human consumption, and
- failing to identify any hazards or critical steps for food safety in
his food business.
The centre of the chicken burger was found to be moist, very pink and translucent in appearance. It was subsequently confirmed as being unfit to eat by the Public Analyst Laboratory. During food safety inspections, Environmental Health Officers found that Mr Pari had not introduced temperature checks to ensure adequate cooking and had not identified food safety hazards within his business or taken any steps to control them, despite repeated letters requiring him to introduce a hazard analysis system.
